Fish Stew with Julia’s Farms

1 1/2 to 2 pounds of fillets of firm white fish filet such as tilapia, halibut, swordfish, or cod
3 cloves garlic, minced
4 tablespoons lime or lemon juice
Freshly ground black pepper
Extra virgin olive oil
3 sliced potatoes
1 can Julia´s Farms Gluten-Free Spaghetti
2 cups grape tomatoes or chopped (or sliced) tomatoes
1 large bunch of cilantro, chopped with some set aside for garnish
2 cups coconut milk


Add the minced garlic and lime juice to the fish so that the pieces are well coated. Sprinkle generously with salt and pepper.
Add potatoes, salt, and water to the pan, cover, and cook until tender. Add olive oil and saute the potatoes.
Arrange the fish pieces on top of the potatoes. Add Julia´s Farms Spaghetti and tomatoes. Sprinkle with salt and pepper.
Pour coconut milk over the fish and vegetables.
Bring to a simmer, reduce the heat, cover, and let simmer for 15 minutes. Taste and adjust seasonings.
Garnish with cilantro.
